So if you want to make your own Coconut Ice for this coming Bank Holiday weekend, here’s how…
200g Icing Sugar
200ml Condensed Milk
2 oz / 60ml 55 Above Coconut Vodka
2 Drops Red Food Colouring
Step1 – Place the icing sugar and condensed milk in a bowl.
Step 2 – Pour in 55 Coconut Vodka.
Step 3 – Stir until well combined.
Step 4 – Stir in the coconut.
Step 5 – Cover a baking tin with cling film and scoop half of the coconut into the tin, packing firmly into place.
Step 6 – Add a couple of drops of red food colouring to the remaining coconut to give it a nice pink shade.
Step 7 – Cover a baking tin with cling film and scoop half of the coconut into the tin, packing firmly into place.
Step 8 – Refrigerate for a few hours before cutting into cubes.
Step 9 – ENJOY!
